1. Basic Butter Biscuit Dough

 

Difficulty level: 2/10

This easy recipe takes less than half an hour, and with only 5 ingredients it is simply a breeze to make!

Ingredients:

  • 1 cup softened butter
  • 2/3 cup caster sugar
  • 2 tsp vanilla extract
  • 1 egg
  • 2 cups plain flour

You will need:

  • 2 baking trays, baking paper
  • 1 wooden spoon
  • 1 large bowl
  • 1 tablespoon

Method:

   Step 1 – Preheat oven to 180C. Line 2 baking trays with baking paper

   Step 2 – Using a wooden spoon, mix wet ingredients in a large bowl until combined. Sift flour and stir until combined

   Step 3 – At this stage, you can mix it up by adding your favourite chunky ingredients like fruit, nuts, or chocolate if you want! Just fold in gently to your mixture

   Step 4 – Using a tablespoon, roll mixture into small balls. Place in lined baking tray, flatten slightly using a fork or your hand. Allow room for spreading

   Step 5 – Bake for 15 to 18 minutes until golden. Cool for 5 minutes.

2. 3-Ingredient Gluten Free Coconut Macaroons

 

Difficulty level: 1/10

Macaroons are not as difficult to make as you think! With only 3 ingredients, this gluten free recipe takes less than 20 minutes!

Ingredients:

  • 5 1/2 cups  flaked coconut
  • 1 (300ml) can sweetened condensed milk
  • 2 to 3 tsp vanilla extract

You will need:

  • 2 baking trays, non-stick baking paper, non-stick cooking spray
  • 1 wooden spoon
  • 1 medium bowl
  • 1 tablespoon

Method:

 Step 1 – Preheat oven to 165C. Line 2 baking trays with non-stick baking paper, and spray with non-stick cooking spray.

 Step 2 – Mix ingredients in a medium bowl until combined.

 Step 3 – Using a tablespoon, roll into small balls. Place in lined baking tray. About 4cm apart.

 Step 4 – Bake for 10-12 minutes until lightly golden. Cool for 5 minutes.

3. Vegan Peanut Butter Cookies

 

Difficulty level: 3/10

Making cookies that your vegan or diary free colleague can eat doesn’t need to be hard! These yummy peanut butter cookies are very easy and only take 25 minutes.

Ingredients:

  • 1 cup peanut butter (you can use either crunchy or creamy)
  • 1 cup sugar
  • 6 tbsp almond milk
  • 2 tsp vanilla extract
  • 1 cup plain flour
  • 1 tsp baking soda
  • Pinch of salt

You will need:

  • 1 baking tray, baking paper
  • 1 wooden spoon
  • 1 large bowl
  • 1 tablespoon
  • 1 fork

Method:

Step 1 – Preheat oven to 180C. Line baking tray with baking paper.

Step 2 – In a large bowl, mix together peanut butter, sugar, almost milk, and vanilla. Then add flour, baking soda, and salt. Use your hands to combine.

Step 3 – Using a heaped tablespoon, roll into balls. Place on lined baking tray about 6cm apart. Use a fork to flatten. Bake for 10-13 minutes, allow to cool.

4. Gooey Fudge Chocolate Brownie Cookie

 

Difficulty level: 4/10

Using two bowls, this recipe is slightly more complicated than the others, but still super easy! This recipe takes less than 25 minutes.

Ingredients:

  • 1/2 cup melted butter
  • 3 tbsp vegetable oil
  • 1/2 cup unsweetened cocoa powder
  • 1 cup white granulated sugar
  • 1 egg
  • 2 tsp pure vanilla extract
  • 1 1/3 cups plain flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/3 cup chocolate chips (or more if you wish!)

You will need:

  • 2 baking trays, baking paper
  • 1 wooden spoon, 1 whisk
  • 1 medium bowl
  • 1 large tablespoon or small ice cream scoop

Method:

Step 1 – Preheat oven to 175C. Line 2 baking trays with baking paper.

Step 2 – In a medium-sized bowl, mix butter, vegetable oil, cocoa powder, and sugar. Then beat in egg and vanilla extract.

Step 3 – In a separate bowl, combine flour, baking powder, and salt. Then add to other mixture until combined. Gently fold in chocolate chips.

Step 4 – Using a large tablespoon or small ice cream scoop, roll into balls. Place in lined baking tray, flatten slightly so still thick.

Step 5 – Bake for 10 to 12 minutes. Cool for 10 minutes before serving.
